Hello and happy Sunday to all of you! I hope everyone is well today and I will be posting more and that is a promise!!
Today I made Pumpkin Spice Muffins and I used Kayla Chandler's recipe. I will include link to the recipe.
Not sure what made me want to make muffins today but I did and wanted to try the Pumpkin Spice Muffins. They are easy to make which is great and I like when recipes are easy.
Sometimes when there is a lot going on, I get overwhelmed and really panic. This recipe is super easy, takes about a half hour to bake but is worth it!!
I did not make sure I had all ingredients but thankfully I did have everything. So this morning, I got all the ingredients together and mixed them all up and baked the muffins.
I did take pics and will post them.
These are the dry ingredients that you mix separately and the recipe tells you this.
These are what the muffins look when you add the liquid and eggs and yes I somehow misplaced 2 of my silicone muffin cups.
These are the muffins fully cooked and yes, I ate one muffin to try them. They are certainly a different texture but are very yummy! I d plan to put these in the freezer and just take one out and eat it.
You can put these muffins in the freezer for up to 3 months and you can put them the refrigerator (use an airtight container) for one week.
The muffins are cooling and I will bag them up and put them in the freezer. I may keep one out and put it in the fridge for tomorrow's breakfast.

Also, I used whole milk with my muffins just so you know. You can used almond milk or oat milk.
