Meatball Boats

Hello everyone! I have another recipe and it's a quick and easy one. You do use the oven but it's worth it! 


Meatball Boats  - Don't LOSE this recipe 😋
Ingredients:
1 lb. ground beef
1 large egg
⅓ C breadcrumbs
¼ C Parmesan cheese
1 tbsp. Minced garlic
1 Tbsp fresh chopped parsley
Salt and pepper to taste...

Happy Saturday and Pesto Recipe!!!

 Hello and happy Saturday everyone! I hope all of you are doing well and enjoying the day so far or evening, depending on where you are.


I found a recipe for a Wild Garlic Pesto, it's a german side dish and I think I may make it soon. It sounds yummy and I love garlic. 

Here is the recipe: 


Wild Garlic Pesto

BĂ€rlauchpesto
This variation of classic Italian pesto uses wild garlic (ramps) and has rapidly gained popularity in Germany. Serve with cooked meats, pasta, or anywhere you'd use the classic pesto.
Course Condiment, Side Dish
Keyword Pine nuts, Ramps
Servings 

Ingredients

  • 3 tbsp grated parmesan or favorite artisan cheese
  • 2 tbsp pine nuts
  • 1/4 cup cold-pressed rapeseed oil (Rapsöl or canola oil)
  • 3 oz wild garlic ramps, BĂ€rlauch
  • salt
  • pepper

Instructions

  • Thoroughly rinse wild garlic leaves, drain well and chop coarsely.
  • Add the leaves, the oil, pine nuts, and cheese to a mixer or food processor and mix until the ingredients come together in a smooth paste.
  • Season to taste with salt and pepper.

    I would say you can take out the pine nuts if you are allergic and add something else.  If you are not allergic to nuts, give it a try.

Mini Cream Cheese Flower Tarts

Normally, I have posted about healthy foods but I have a sweet tooth as well. So here is a recipe if you would like to try it.

I do think it's okay to have some sweets even if you are trying to eat better. You may not think the same as I do and that is okay.

It can be hard to give up your favorite foods or snacks when trying to eat better. 


They look delicious and something fun to make. Some advice, if you are using the oven, cook early in the morning or after dinner. The oven heats up and can merge the kitchen very warm on shot day. 

If you are having cool weather then you can make them anytime.

I know from experience and my grandmother that cooking with the oven on a hot day is not fun. Get it done early if you can.

Training for a 13k

I have been around, just not posting as much.

Lately, I am training for a 13k virtual race. I will not be running but walking and I need to get used to 13k.

The race is for charity and a great cause too. I love getting outside for walks and listening to music as well.

I had to change clothes, getting ready for a walk around 8:30 am today.

The sun is out ad hope it's a warm 60 degrees out, I don't mind cool weather but it would be nice to have some warm weather too.

Hopefully, I can get more posts up. I did finish a show on Netflix that I can write about and have some recipes to are too.

Look for a post tomorrow, not sure I will post again today after my walk. I will start the pot itself and I think with blogger I can set a time for the post to post.

Alright, I need to log water intake and help my niece.
