Honey Mustard Chicken Wings

 Hello Thursday folks! I am bringing you another recipe for New Year's Eve and this recipe also has you making the sauce from scratch. 

The sauce is only 4 ingredients and is easy to make.

I also want everyone to know that you can get boneless chicken instead of wings with the bone, I know some people prefer one to the other and that is okay.

I may try this recipe in the future and give the honey mustard a try.

Ideas for New Year's Eve and Taco Stuffed Zucchini Boats! Plus Updates

 Hello and Good Morning! It is Wednesday and I hope all of you are doing well, hopefully, you have recuperated from Christmas but soon it will be New Year's Eve and that can be another busy night for most people.

For the updates first, I will be taking another short break from December 31st to January 2nd. Posts will resume after this short break, this means that you get recipes from today to Friday! There are no more breaks coming up unless something comes up in the family or I just need a break, I will let you all know if I need a break or plan one.

This week will be about ideas for NYE appetizers and meals and finger foods.

Also, I may try to switch things up and put in ideas for exercise and recipes for food. I will also write down what I post so I can keep track and not post the same things twice.

Today's recipe is Taco Stuffed Zucchini Boats! They look delicious and easy to make. I know kids can be picky eaters but maybe they would like this or if they like peppers, make a taco stuffed pepper.

Easy Chicken and Dumplings

 Hello and good morning on this wonderful Christmas Eve day! I have a recipe for all of you and don't worry if you do not have all the ingredients to make this right away if you choose to.

Pomegranate Guacamole by Downshiftology

 Hello and happy Wednesday! It's the middle of the week and I will be working today but wanted to get this post scheduled while I am at work.


I received an email from Downshiftlogy and thought that this was an interesting recipe. I have never thought of adding pomegranate to guacamole. It looks very interesting and maybe I will try it, I am not a fan of guacamole so will need to find a use for the other half of the avocado.

Sugar Cookie Truffles

I am a day late on posting! I’m so sorry everyone. 

I hope all of you are doing well and not super stressed this week. I have been down a little bit this week already and it may get a bit tougher as Christmas approaches for me.

Scheduling Posts and Taking a Small Break

 Hello and good morning Sunday folks! I hope all of you are doing well and in good health. 


I just wanted to share a few things with all of you, I will be scheduling posts for the coming week and I will be taking a short break next week. Saturday is Christmas day. 

The posts will be scheduled for Monday, Wednesday, and Friday this week, and then I will be taking Christmas Day off (December 25th) to next week's Tuesday off.  So from December 25th to December 28th, I will not post anything.


Also, I will be taking a short break from December 31st to January 2nd. I like to celebrate holidays and take some time off for myself. I will be scheduling posts for December 29th to the 31st, posts will resume on January 3rd.

I hope all of you understand why I am taking a break. I will put a reminder in Friday's post about "taking time off" soo that way all of you have a reminder.

Dirty Snowmen, a Adult Hot Chocolate Beverage

 Hello and happy Monday! It's a new week, a fresh start, and a fresh start to the workweek. I will be at work this week and getting out of the house is great. I hope all of you are doing well, had a great weekend, and are in good health.

Poached Chicken and Winter Vegetable Soup by Downshiftology

 It's been about a week since I last posted, I really need to work on getting posts up and scheduling them. I am slacking a lot and that is not a good thing, hopefully, I can make this a new habit (schedule posts).

I hope everyone is doing well and are in good spirits this week, it's been cold where I live and we had a little snow the other night. Everything else is going good for now.


Today's recipe is soup, soups are great in the fall or on very cold winter days. I do not know how may of you may live somewhere where you get 4 seasons or just one. If you travel and are able to make soup on a cold and blustery day, soup is a great choice.

Peanut Butter Cup Secret Center Cookies and Why I have been Absent

 Hello and happy Friday!!!! It's the end of the week and I plan to relax this weekend and order Chinese food fr an early birthday gift to myself.

I have been working 2 jobs this week and fighting a cold that I got, it was not COVID and I am finally feeling better. I am not fully 100% yet but I am not as tired as I was. This is why I was absent most of this week.


To make up for my absence, I will post 2 recipes tonight and I will post another one tomorrow.  Today's recipe looks like a fun one and I think kids would enjoy making this. I may even try this recipe.

Easy Keto Sheet Pan Chicken Fajitas with Kayla Chandler

 Hello and happy Friday!! We all made it to the weekend and it's the last day of the workweek! I have some plans for Saturday which mostly stay home but I need to cook turkey bacon before Tuesday because I am making a chicken bacon ranch pasta salad Monday. This will be a lunch for work on Tuesday.

That reminds me, I am using an app (if you are curious), I use the "Plan to Eat" app so I can plan out my lunches for the week and especially for work. I'm sure work would provide a meal for me but I have been eating better so meal planning works best for me.


Okay back to our scheduled recipe for today.

Today I am sharing an easy sheet pan recipe, just put everything on the sheet pan and cook it in the oven! I have another recipe I will share next week on Greek Chicken sheet pan becuase I want to make that.

White Bean Dip

 Hello and happy Thursday! I know I have not been posting but this will change and I will be scheduling posts for the next few weeks. 

I am starting a part-time job next week and that is between my nursing job hours, this is why I will be scheduling posts. Thanks for sticking with me through this transition and me getting back on track.

Cheesy Tortellini and Pepperoni Pizza

 Hell to all you wonderful folks out there! It's Wednesday morning and the sun is out in my neighborhood! It's a beautiful morning and I am happy to be here.


Today I am sharing a recipe with you, its an easy recipe and it only has 7 ingredients! I am not sure if you folks like these recipes that have 12 ingredients or less but I think they are great! The fewer ingredients you need, the easier it is if you are a busy person.


I am sharing the cheese tortellini and pepperoni pizza recipe, this is all mixed together and you can always change up the ingredients if you would like. I am not a fan of mushrooms at all and I don't like pepperoni either.


You can use up any item you may have in the frig or be creative and add more in, it's entirely up to you on how you want to make this recipe.

One Skillet Mexican Quinoa

 Hello and happy Wednesday! I have seriously slacked off on posting on this blog and there is no excuse! I am doing well, got out of a funk I was in, and hopefully will get outside a little more this week.

I am cooking rice at the moment for my lunch in a few hours, I like to add rice vinegar to my rice so need to cook it early and be less hassle for when I want to eat.


Today, I will be sharing a recipe for Mexican Quinoa. 

Trying to choose better options and trying to make meals more filling. I bought quinoa last week and going to use it this week. I looked up some recipes for what I could add to quinoa and like the Mexican skillet.

You can substitute some of the ingredients if you need to, II am a picky eater so I may swap out the red beans for black beans.

Smothered Fingers and Toes

 Hello and happy Monday! I hope it is sunny where you are, it is raining where I live right now and it rained all night too.

This week I will share more recipes and will continue to do that. I am going to schedule the posts so I do not forget. It is helpful to get everything written and scheduled and I do not have to worry about missing a day.


Today's recipe is Smothered Fingers and Toes from Pillsbury. Halloween is right around the corner and I wanted to share some fun recipes this week that relate to Halloween.

This is french fries, tater tots, beef, and taco seasoning. It looks fun and I would give this a try and make it for movie night.

It only has 8 ingredients! I love that it doesn't have a lot of ingredients because if you are very busy, this will help you have to prepare less and takes 35 minutes to make!

Pumpkin Spice Muffins!

 Hello and happy Sunday to all of you! I hope everyone is well today and I will be posting more and that is a promise!!

Today I made Pumpkin Spice Muffins and I used Kayla Chandler's recipe. I will include link to the recipe.


Not sure what made me want to make muffins today but I did and wanted to try the Pumpkin Spice Muffins. They are easy to make which is great and I like when recipes are easy. 

Sometimes when there is a lot going on, I get overwhelmed and really panic. This recipe is super easy, takes about a half hour to bake but is worth it!!

I did not make sure I had all ingredients but thankfully I did have everything. So this morning, I got all the ingredients together and mixed them all up and baked the muffins.

I did take pics and will post them.



These are the dry ingredients that you mix separately and the recipe tells you this.


These are what the muffins look when you add the liquid and eggs and yes I somehow misplaced 2 of my silicone muffin cups.


These are the muffins fully cooked and yes, I ate one muffin to try them. They are certainly a different texture but are very yummy! I d plan to put these in the freezer and just take one out and eat it. 

You can put these muffins in the freezer for up to 3 months and you can put them the refrigerator (use an airtight container) for one week. 

The muffins are cooling and I will bag them up and put them in the freezer. I may keep one out and put it in the fridge for tomorrow's breakfast.

She added nuts on hers and I ddi not add nuts to mine. You can decide if you want nuts on yours or not. 

Also, I used whole milk with my muffins just so you know. You can used almond milk or oat milk.

 Hello and happy Thursday! I am changing the name of this blog since I don't review much anymore.

I came up with a name that fits everything from book promoting, recipe sharing, and just updating you folks that read my blog.

The new name of this blog will be..... Cassandra's Sharing Corner!

This way I can share everything! I can post recipes, share what I make, do book promotions, and update all of you at the same time.

I know I haven't posted any recipes this week, I took time to think over the new name of the blog and I got busy in life. Next week I will return to recipe sharing on Monday, Wednesday, and Friday. I will book promotion on Tuesday, Thursday, and maybe Saturday, Sunday is my day off so I can rest.


I hope that the name change does not upset any of you and I hope you like the new name, the name change will be made tomorrow.

Crescent Dogs

 Hello and TGIF!!!! Thank goodness it's Friday!! We have made it through another week. and today is October 1st! Crazy how the year has gone by so fast.

Well the weekend is almost here and I need to plan Halloween. movies and some pumpkin recipes for you. I will mix it up for you so that you do not feel overwhelmed by pumpkin recipes.


Today I bring you a easy recipe, kids will love it and it's great anytime! Today's recipe is Crescent Dogs! It's hot dogs in a crescent roll which is easy and great as a finger food at any gathering.

Ham and Cheese Crescent Roll Ups

 Hello and happy Monday! Its a fresh week, a fresh start and I hope you have a great start to the week.


This week, I am posting about recipes that are easy, kid friendly and great for adult sports parties. These recipes have 3 ingredients in them and this makes it easy which is great if you are busy.

Caramel Apple Chex Bars

 Hello and Happy Friday!!!! It's the end of the week and almost the weekend. Do you have plans for the weekend? I have nothing planned yet and I usually do not plan a lot on weekends.


Today's recipe is for Caramel Apple Chex Bars, I do not know if kids will like this or not. You can make this anytime and it can be for adults too. Also, change up the ingredients to suit your tastes if you need to, nothing wrong with adding more or less.

I would say, use cinnamon and sugar to give it flavor and I have not seen an apple seasoning before but if you find one, add that and not the apple slices. This is up to you and you can do whatever you would like.

Spinach Alfredo Skillet Dip

 Hello and Happy Monday! Today is a beautiful fall-like day in my town and I love it. It's almost the first day of fall too.


Today I bring you a Spinach Alfredo Skillet dip! This is great anytime and if you have friends or family that love this dip, they may love it when it's a game day too. 


It's football season here in the United States and I think this dip would go well at sports parties or any gathering. You can also substitute the rolls for nachos if you would like to.

Mini Chicken Bacon Ranch Pot Pies

 Hello and happy Friday!!! It's the end of the week and the weekend is almost here!

I love having weekends off and I don't plan too much for Saturday. A week ago I went apple picking and got my apples! Super excited for apples, I may make an apple crisp too. 

Now to today's recipe! I have for you.... Mini Chicken Bacon ranch Pot Pies! 

I have not tried these but it is a different take on pot pies. You can make them small or larger but make sure everything inside the pot pie is fully cooked! You don't want anything to be raw.

Chicken Bacon Ranch Pasta Salad

 Hello and Happy Wednesday! We are halfway through the work week which is great and I have a great recipe for you today. You can make this anytime of the year and if you have kids, they will love it!


Today I bring you a recipe called Chicken Bacon Ranch Pasta Salad! I have made this and tried it, it's super yummy!!! I would make this again too and it's great for on the weekends too.

So I am a picky eater and left out cherry tomatoes and  used plum tomatoes and left out the avocado. The rest of this recipe I didn't change anything.

This is easy to make and the dressing is nice and light. The dressing is regular Ranch dressing and add plain greek yogurt to it, its very good and I would make that dressing again!

Best Healthy Coleslaw (No Mayo)

 Hello and happy Tuesday! Yesterday was a holiday and I took it off to celebrate and do some knitting.

Today I bring you a recipe for coleslaw, I am not sure how many of you eat coleslaw for even like it. I am not a fan of it but may give this recipe a try.


You can add extra vegetables in it if you would like or a different dressing, just have fun with it.

 Hello all you wonderful people! I am slacking a lot this week and there is no excuse. 


Today I bring you a recipe for a Loaded Burger bowl with homemade Thousand Island Dressing by Kayla Chandler. I follow her on YouTube and she makes videos on meals prep that is healthy and is delicious! I have tried her recipes.

Chocolate Chip Cheesecake Bars

 Hello and Happy Wednesday!! You are now halfway through the workweek and the weekend is almost here! Hot and humid days are approaching where I live so I may stay inside this weekend but hope to get outside for a short walk.


Today I bring you a recipe for Cheesecake bars! They look easy to make but take longer to bake and chill. If you have time to make this dessert, you will love them!

I know a lot of people love cheesecake and sadly, I am not a fan unless it's peanut butter or chocolate then I will eat some cheesecake. I am a picky eater.

Overnight Cheesy Bacon and Broccoli Egg Bake

 Hello to all you beautiful and wonderful people! 

I have not been around and I am sorry, had some bad days and dealing with a tropical storm, thankfully my town did not get too much damage but I know surrounding towns got way worse.

Today is Tuesday and I am a day late in posting recipes! I have a recipe for breakfast, I thought of this when I was looking at what to share, and sometimes you need to keep breakfast in mind.

Some people may be super busy in the morning or have time, this recipe you can make and put in the refrigerator overnight or portion out sizes and freeze them, then heat in the microwave and you have breakfast or breakfast on the go!

Grilled Chicken Caesar Wraps

 Hello and Happy Thursday! I am sorry for not posting yesterday, I will be better about that.

A lot of things yesterday distracted me and my hometown is having a heatwave too. I will schedule Friday's post today too so I don't have to worry about it.


Today's recipe is easy, you can buy the chicken all done up if you want. I know some people may be super busy and having the chicken already done is a big help.

Made Some Foods!

 Hello and happy Tuesday! 

I made some of the foods that I have talked about! There are a few pictures and it was fun to make these recipes.

The first recipe I made was the Chicken Bruschetta Chicken Pasta and that was easy! I made it on Saturday and it was delicious! I am making it again today for my lunch, it's super easy and fun to make.

The other recipe I tried was Overnight Oats, this recipe I learned about from a youtube video, I have been watching meal prep videos to get different ideas for lunches at home. One video had a lot of ideas and one was overnight oats.

Yesterday, I made the overnight oats and left it in the fridge from 4pm to this morning. I added a protein powder to it and ate it with mixed berries this morning. Peanut butter was added to it as well, not a lot. The overnight oats were very sweet and I could only eat a small portion.

Having leftovers of the Overnight Oats is fine with me. I just need to cut back on the sweetness. I used a Chobani Vanilla yogurt and used whole milk in it as well. It was easy to make and yummy, just too sweet so need to figure out what I need to subtract next time I make it.


This is the overnight oats with mixed berries and grapes that I had this morning.







This is the chicken Bruschetta Chicken Pasta that I made and had rice pilaf with it. It was delicious!!!!

Chicken Margherita Melt

 Hello to all you beautiful and lovely readers! Happy Monday!!!

It's a fresh new week and a fresh start as well. I am sorry for not posting sooner, I did not schedule my posts for the week because I was being lazy yesterday and relaxing. I went to 2 baby showers 6 days apart and that made me exhausted but, it was fun!

So here I am, posting now, and will schedule the other 2 posts for Wednesday and Friday of recipes. I may share some fun news tomorrow with you folks on what I had for lunch on Saturday before I went to baby shower #2.


Today's recipe is fun, easy to make and you do not need a panini press to press the sandwich. If you have a panini press, please feel free to use it.


The recipe is Chicken Margherita Melt and I think that you can toast this in a pan, put it on toast or don't toast your bread and make it any way you like.

Bruschetta Chicken Pasta

 Hello and happy Friday! This recipe that I am sharing today, I will be making on Saturday and I am excited about it!!! It's a yummy dish and I like chicken, pasta and tomatoes so this is a win for me.

Today I have a recipe for Cheesy Chicken Alfredo Dip! Americans love cheese, some people may not love cheese or are allergic to it. I hope anyone with a dairy allergy can find a substitute and still make this recipe.
