Keto Strawberry 🍓 Chia Parfait

Hello everyone, it has been a long time since I last posted here. I think it has been 2-3 years.

How is everyone doing? I hope all of you are well.

I am going to post here once a week with a recipe, I like sharing recipes and most are jeto but I do share recipes that are not keto.

I am not sure if I will post more or just stick to a recipe once a week.

Wednesday will be recipe day on here so keep an eye out.

There are less than 10 ingredients, you can add granola to this if you want or just nuts, you also don't have to add these items if you don't want to.

Keto Chicken Crust Pizza

 Hello and happy Wednesday! We have now made it halfway through the work week! The week is almost over and the weekend will be here soon, do any of you watch football? I do not watch football but it is a big sport here in America. I will do an appetizer for Superbowl day the week before the Superbowl comes on.


Now onto today's recipe. I found this interesting pizza crust and yes, it is keto-friendly but I think you should try this. It's a chicken crust pizza and only uses 4 ingredients! That's my kind of recipe and is great for people who stay within a budget.


I budget when I go food shopping so I can stay within the allotted amount for food. Anyways on to the recipe.

I found this person on youtube and they have some good ideas for keto foods, you can always try them or not. I like to share so today is the pizza crust made out of chicken.




It looks interesting and I want to try this. There is no flour involved, just mozzarella and parm cheese and chicken and eggs. Seems simple enough.

Sweet Potato Skins with Citrus Pulled Pork

 Hello and good morning folks! I hope all of you are well and having a good one so far. I am tired but I did a 30-minute workout and I am tired but feel great! 

Today's recipe is from Kayla Chandler and it has sweet potatoes in it! I am not a fan of sweet potatoes but I know a lot of people are.

I decided on this recipe to do something different and I figured you may be getting tired of keto recipes. It's ok, I wanted to switch up recipes.

Vegetarian Chili by Downshiftology

 Hello and happy Friday! Sorry my post is later than usual, I was helping my grandfather this morning and that took awhile with everything he needed to get done plus doctors appointments.

My grandfather is healing and is doing a little better.

Birthday Cake Cookie Dough Energy Bites

 Hello and good morning to all of you wonderful folks! It's Wednesday and it feels more like later in the week. I am still helping my grandfather with things around the house. I am still stressed out, sometimes emotional eating, and missing my bed. 

I sleep downstairs in case my grandfather needs me, I sleep on a couch so not getting enough sleep.

How do they look? This is something I would eat.

There are some ingredients you may not be used to but use google to find where you can buy them or ask someone you know and see if they have some of the ingrredients.

I know most people who look at the recipes I share may not be on paleo, keto, or any diet. Some of the recipes call for almond flour or coconut flour, grapeseed oil and these are not cheap items. So please check or plan ahead if you want to shop on a budget.

Minestrone Soup by Ambitious Kitchen

 Hello everyone! I hope all of you are well. I am helping my grandfather with things around the house since he had a fall last week Tuesday, he has a small hairline fracture near his hip. Thankfully, the fracture is not bad and it did not affect his hip replacement. He just has to heal.

Everything else is going well and I'm just trying to relax.


Today's recipe is Minestrone Soup. I wanted to share this because we got a snowstorm that is still going. Soups are great for the winter and cold, you can heat it up and enjoy it!

Huevos Rancheros

 Hello and good morning Friday!!!! I love Fridays, even though I work, I still love Fridays because after work I start my weekends. I still have no plans for the weekend and I need to meal plan for the following week.

Today I bring you another egg recipe and you can eat this whenever you want to, it is mainly a breakfast meal but eat it when you want to.


The recipe for today is Huevos Rancheros and it is a Mexican dish. The huevos rancheros means ranchers eggs. 


This recipe has black beans and you fry the tortilla, you don't have to fry the tortilla if you don't want to. You can always give this a try and not make a lot in case you decide you do not like it.

This looks good and I need to plan when to try this, I am not a big fan of beans or avocados but I would try it. I will also need to plan other meals to use the rest of the avocado.

You can also make the eggs any way you like, I want to people to try new things and if you need t change ingredients then do so.

Carnitas

 Hello and happy Wednesday! We are halfway through the week and I am looking forward to the weekend. I do not have any plans but I like having the weekend to either stay home or make plans to drive somewhere.

I promised you the Carnitas recipe and I have it for you today. You can make this in the oven or put it in the slow cooker (on a weekend) and cook it nice and slow. You could add this pork carnitas to any dish.

Carnitas Omelette

 Hello and good morning Tuesday folks! I am sorry for not posting yesterday, I was called into work and was very exhausted after my shift and still worked my nursing shift after the food service job.

Today I am sharing a recipe with you and there will be a recipe for tomorrow and Friday, today's recipe will coincide with tomorrow's recipe so please, check back tomorrow.


I like breakfast and like to have a filling and sometimes big breakfast in the mornings, today I am sharing Carnitas Omelete from Downshiftology. 

It's simple and easy to make, you use leftovers.

If you don't know how to make an omelette, that is okay because you can make the egg part any way you would like. 

I would also say, add more veggies if you would like and you could make these into muffin egg carnitas! Use a muffin pan, use ingredients and bake in the oven, then you can eat one when you are ready or on the go!

Turmeric Chicken and Rice Casserole by Downshiftology

 Hello and happy Friday! It snowed in my town and I had to shovel the snow, a great workout. I am tired from snow shoveling but I can relax for now.

Carne Asada Tacos

 Hello and happy Wednesday everyone! I have a recipe to share and it's also crappy weather in my town today so I am staying inside and blogging for now until lunchtime. 

Things are good and my lunch is pre-made already which is great. I am having tuna with avocado mayo, chips and not sure what else will have with it. I like to make my breakfast and lunches ahead of time so I can grab and go. 

Sometimes when I am watching something really good and I just want to grab my lunch and eat and watch, this is why I make lunches ahead of time plus it's easy. The only time I make breakfast ahead of time is like egg muffins so I can heat and eat them.

I have rambled on and now for today's recipe. Today's recipe is Carne Asada Tacos! 

They look delicious and I need to try these! Not sure when but I will post about them when I do make them.


The recipe says it will take 2 hours of prep time but you can always cut up vegetables before you make the meal to save time. This recipe also uses beef but I am sure you can use chicken or pork if you would like.

Tuna Salad by Downshiftology

Today I am sharing a recipe for Tuna Salad and I want to try this even with dijon mustard. There are not many ingredients which is great and are easy to make. You could also make this and put pasta in with it too.

Honey Mustard Chicken Wings

 Hello Thursday folks! I am bringing you another recipe for New Year's Eve and this recipe also has you making the sauce from scratch. 

The sauce is only 4 ingredients and is easy to make.

I also want everyone to know that you can get boneless chicken instead of wings with the bone, I know some people prefer one to the other and that is okay.

I may try this recipe in the future and give the honey mustard a try.

Ideas for New Year's Eve and Taco Stuffed Zucchini Boats! Plus Updates

 Hello and Good Morning! It is Wednesday and I hope all of you are doing well, hopefully, you have recuperated from Christmas but soon it will be New Year's Eve and that can be another busy night for most people.

For the updates first, I will be taking another short break from December 31st to January 2nd. Posts will resume after this short break, this means that you get recipes from today to Friday! There are no more breaks coming up unless something comes up in the family or I just need a break, I will let you all know if I need a break or plan one.

This week will be about ideas for NYE appetizers and meals and finger foods.

Also, I may try to switch things up and put in ideas for exercise and recipes for food. I will also write down what I post so I can keep track and not post the same things twice.

Now, onto the recipe for today! You can make this recipe anytime and you can make it for NYE too.

Today's recipe is Taco Stuffed Zucchini Boats! They look delicious and easy to make. I know kids can be picky eaters but maybe they would like this or if they like peppers, make a taco stuffed pepper.

 Hello and good morning on this wonderful Christmas Eve day! I have a recipe for all of you and don't worry if you do not have all the ingredients to make this right away if you choose to.

Pomegranate Guacamole by Downshiftology

 Hello and happy Wednesday! It's the middle of the week and I will be working today but wanted to get this post scheduled while I am at work.


I received an email from Downshiftlogy and thought that this was an interesting recipe. I have never thought of adding pomegranate to guacamole. It looks very interesting and maybe I will try it, I am not a fan of guacamole so will need to find a use for the other half of the avocado.

Sugar Cookie Truffles

I am a day late on posting! I’m so sorry everyone. 

I hope all of you are doing well and not super stressed this week. I have been down a little bit this week already and it may get a bit tougher as Christmas approaches for me.

The recipe I am sharing today is called Sugar Cookie Truffles and they look delicious!! They look easy to make as well but a little time-consuming.

Scheduling Posts and Taking a Small Break

 Hello and good morning Sunday folks! I hope all of you are doing well and in good health. 


I just wanted to share a few things with all of you, I will be scheduling posts for the coming week and I will be taking a short break next week. Saturday is Christmas day. 

The posts will be scheduled for Monday, Wednesday, and Friday this week, and then I will be taking Christmas Day off (December 25th) to next week's Tuesday off.  So from December 25th to December 28th, I will not post anything.


Also, I will be taking a short break from December 31st to January 2nd. I like to celebrate holidays and take some time off for myself. I will be scheduling posts for December 29th to the 31st, posts will resume on January 3rd.

I hope all of you understand why I am taking a break. I will put a reminder in Friday's post about "taking time off" soo that way all of you have a reminder.
